All available formats are presented as profiles with their own characteristics, but you may as well create your own user-defined profile by selecting the video size, image quality, audio quality and channels on the right-side pane and then saving it as a new profile.

ImToo DVD Ripper Platinum features a nice interface with a skins menu that unfortunately it's empty, so you can't really change or customize it in any way.
